Recipe – Berry, nut, cacao nib mix

This little recipe causes quite the ripple when it comes out on tour.  It’s healthy, quick, delicious and for bonus points it can be served as a dessert with ice cream or it can go on the muesli in the morning.  Genius!

Berry Nougat with Raw Cacao Nibs

You can let the berry nougat thaw a little before eating, or have it still frozen – I like it about halfway in between frozen and thawed, as it’s juicier and has more flavour. Serve with rich chocolate ice cream or on muesli in the morning.

Recipe makes a little over 8 cups… which is heaps.

Ingredients:

  • 200g raw almonds
  • 4 heaped tablespoons of almond butter (or mixed nut butter) (to ‘glue’ it together)
  • two handfuls of raisins or sultanas (for chewiness)
  • 60g pure maple syrup (to taste – make sure it’s still tangy, not too sweet)
  • a couple of handfuls of raw cacao nibs
  • about 900g of frozen mixed berries.  Half defrosted is best when mixing together.

Process:

1. In Thermomix or food processor, chop almonds until roughly chopped.

2.  In a large bowl (or thermomix), mix in the almonds, almond buter, raisins, cacoa nibs, maple syrup and the berries.  

That’s it!  Serve with chocolate ice cream and sit down to contemplate how your life will never be the same again.
