Peppermint Creams Recipe

This is a great little dessert when you want something small, sweet and delicious.  As a bonus, this one simple and good for you.

It has two layers, the coconut cream and the chocolate.

Ingredients – The Cream

1 cup of desiccated coconut

1 tablespoon of honey

1/2 teaspoon of peppermint extract

Ingredients – The Chocolate

3 tablespoons coconut oil

2 tablespoons cacao or cocoa

1 tablespoon honey

 

Method:

Place cream ingredients in food processor and pulse at high speed.  Scrape blade and pulse again.  Repeat until mixture is smooth and combined.

Place chocolate mixture into a large mug and mix with a fork until well combined.

Gently press the cream mixture into six mini muffin holes or silicon tray.  Use a teaspoon to top the cream with the chocolate mix.  Place in fridge and allow to set.  Serve with coffee and a good book!

Makes 6 mini peppermint creams.
