You can enjoy Hot Cross Damper at any time of the year but, the Easter long weekend is just right around the corner and we as outdoor enthusiasts might spend our holidays out camping in the beautiful outdoors. What’s better than sitting under the night sky, full of stars with a hot beverage, fresh sweet rolls and good company? Not a whole lot if you ask me!
Damper is a type of ‘bread’ that got its name from the way it was cooked. The campfire had to be dampened with water so that you could bake it the coals.
We’ve combined our tour famous damper bread from super guide Imogen with mouth watering hot cross buns to bring you this super delicious Hot Cross Damper Recipe. We love it and hope you and your loved ones do too!
Glaze:
Step 1: Preheat oven to 200°C or have a hot fire heating up bricks of coal for the campfire oven.
Step 2: With your fingertips, rub together flour, salt, spices (cinnamon/all spice/nutmeg), sugar and the cold butter together in a large bowl until it resembles breadcrumbs. This will turn into a sticky mess if your butter is not chilled.
Step 3: Add the egg, milk and sultanas to the flour mixture and lightly combine with your fingers.
Step 4: Turn onto a floured work surface and knead very lightly to form a soft dough.
Step 5: Divide the dough evenly and shape into rolls and cut a cross into the top of each roll with a sharp knife OR make one large roll.
Step 6: Mix the Maple Syrup, melted butter and warm water together and brush the tops with the glaze. Bake for 20-30 minutes. The damper should sound hollow when tapped on the base.
If you’re using a campfire oven, evenly place the heated coal bricks underneath and on top of the oven.
Step 7: Cool slightly on a wire rack and serve with butter and your favourite condiments – jam, syrup, chocolate spread etc. Enjoy!
Fun options: Substitute sultanas with chocolate chips or add chocolate crosses on the buns after they have cooled slightly.
